Oliver in the kitchen with homemade hot sauce

About Oliver Makes Sauce

About Oliver Makes Sauce

I'm Oliver. I like hot sauce, and I like seeing what happens when I start changing things.

What started as messing around in the kitchen turned into a lot of experimenting with peppers, fruit, fermentation, heat, acidity, texture, and whatever else seemed worth trying.

Somewhere along the way, the notes, recipes, successes, failures, and questionable ideas started piling up. The cookbook became a way to document some of the things worth making again, and this site became a place to keep the experiments going.

Real Recipes

Built from sauces I've actually made.

Fermentation First

A big part of how I build flavor.

Experiment Often

Because sometimes the weird idea is the good one.

Flavor Over Pain

Heat matters. Good sauce matters more.

Why This Exists

Sharing the useful stuff without pretending every experiment was a masterpiece.

I'm not trying to make this look like everything came out of a perfect test kitchen. Most of it happens in a regular kitchen, with ingredients I'm curious about and an idea I want to try.

Sometimes it works. Sometimes it doesn't. Either way, I like keeping track of what happened, what I'd change, and what might be worth trying again.

That's really what this site is for: sharing the useful stuff without pretending every experiment was a masterpiece.

The Process

Make it. Taste it. Change it. Make it again.

That's pretty much the philosophy. I like repeatable processes and accurate measurements where they matter, but I also like making something because it sounds interesting and seeing where it goes.

Good sauce doesn't have to be precious. It should taste good, be safe to make, and make you want another bite.

Follow Along

More experiments, finished sauces, bad ideas, and whatever I'm currently messing with.

What You'll Find Here

Mostly hot sauce.

Mostly hot sauce. Fermented hot sauces, superhot peppers, fruit-forward experiments, fresh sauces, and notes on the tools and process behind them. Some recipes work exactly as planned. Some become blog posts for different reasons.
